REDFARM HOSTS A SPECIAL ‘WOK STAR SUPPER CLUB’ IN CELEBRATION OF ASIAN CUISINE

RedFarm hosts a Wok Star Supper Club in celebration of Asian cuisine on Sunday, July 28 at 6pm! It’s a steal at $75 INCLUDING tax and gratuity, drinks are not included. Due to limited capacity, reservations and prepayment is required. Do it soon, details below. Don’t miss this exclusive four-course sit down dinner curated by dim-sum master, co-founder & Executive Chef Joe Ng and I.

Gather your friends and colleagues and reserve a table for 6-8 for a fun social time, perfect for attorneys, doctors, dentists, designers, realtors etc. and of course Asian food lovers and foodies, not forgetting all my Hispanic and Latino friends who I know adore Asian food.

And no, I won’t be cooking or giving any demonstrations, so many asked. My role is to curate and produce these gatherings.

RedFarm is famous for its first Chinese restaurant started in New York’s West Village by Chinese scholar & chronicler, Ed Schoenfeld and Chef Joe Ng.  Opened in 2014 with a 44 seat restaurant in a former laundromat, called Decoy focused on Peking duck dinners with a community table (genius). RedFarm proceeded to open above Decoy and now has outposts in West Village, Upper West Side, Austin in Texas, Miami in Florida and Covent Garden in London. I personally think a “Decoy” in Miami would be a HUGE HIT, comment below if you agree!

Ed Schoenfeld was quoted as saying in NY Press about Chef Joe Ng, “probably be the best dim sum chef in Hong Kong.” I love how Chef Ed reinterpretes Chinese food in a modern and inventive way with whimsical touches and unique ingredients only for Miami. The dishes we’ve chosen are a beautiful and delicious mix of classics and chef’s modern takes. I can’t wait to share these with you.

Hate vegetables? Try my glazing technique!

Hate vegetables? Try my GLAZING TECHNIQUE, it will transform your vegetables to a different level. Even kids, spouses and partners will LOVE! GLAZING TECHNIQUE is a French classic technique using butter and stock/water but as usual, in comes Wok Star and as usual, I’ve simplified it and made it my own (see below).

OLD: STIR FRY TECHNIQUE 

The Chinese classic way of cooking vegetables starts by blanching vegetables in liquid, then stir frying and add seasoning. 

My Wok Star way is to do the opposite!  Check post below for full details…

Try this stir fry for cooking flavorful vegetables so you’ll LOVE them!

BIG DIFFERENCE when you fry first, then add stock! 

These are recommendations for best oils to use for high heat wok cooking, definitely NOT vegetable oils. 

NEW: GLAZING TECHNIQUE

With this new GLAZING TECHNIQUE, you INCREASE the fat ratio which softens the stems so they are still crunchy, glossy looking AND softens the hard stems of vegetables. 

And of course, I’m using my cast iron wok and induction wok stove (saving my portable gas stove for hurricane season) to stir fry. You can use a stainless steel pan or pot if you don’t have a wok. But PLEASE not non-stick wok or pans. They cannot handle high heat and should only be used on medium heat.

The French technique combines butter and stock together with vegetables and cooked at the same time.

My WOK STAR WAY:

I use ghee (clarified butter) which can handle 450-485 and chicken stock. I also changed the cooking technique by stir frying the vegetable first, then adding stock.

The ratio 4:3 is a game changer!

4 portions of ghee to 3 portions of stock and NO sugar involved for me, instead add some spice seasoning like Indonesian Ayam from World Spice. They have a ton of choices and grind their spices fresh before shipping. Spices add so much FLAVOR to vegetables and meat. More about this soon.

What a magical feast at Krakatoa Cuisine! Thanks to Chef Abe, John and the team. The presentation and flavors were spot on! 

My WOK STAR SUPPER CLUB introduces you to new foods, you’ll get to make new friends and it’s to promote mostly Asian chef owned restaurants!  We create an Exclusive Prix Fixe Menu at a reasonable deal. Guests in this dinner included a chiropractor, HR manager/musician/podcaster, a judge, a model, singer/artist, sword performer/techno dancer, ex-restaurant owner, a sewing teacher, dermatologist, import/export executive, PR consultant, a couple both attorneys and more.
