Wok Star’s Famous Rainbow Lettuce Wrap

December 24, 2020 By Eleanor Hoh Leave a Comment

This Rainbow Lettuce Wrap is an “Asian taco”, I serve this as an appetizer in my cooking classes. It’s always a BIG HIT and will WOW your guests. A “rainbow” of colors and beautiful presentation with flavors and textures that explode in every bite.

Rainbow Lettuce Wrap Appetizer

Pairs beautifully with Zonin prosecco, ice cold Tiger Beer, both light and bubbly and of course Fiji Water.

Use a crispy Romaine Leaf.  Slather sweet Koon Chun’s Hoisin Sauce on leaf, fill with ground turkey and a “rainbow” of multi colored bell peppers, crunchy jicama and/or chayote, topped with toasted pumpkin seeds.

I call it a “Party Dish”, cause it’s a PERFECT appetizer for entertaining at home, savor during Game Day or show off at Tailgate. It’s FAST to pull together. I have eaten this as my main course dinner. Make in small batches so it’s fresh and warm.  It’s addictive! You can even make the dishes ahead and just warm up last minute, of course not the lettuce leaves.

You may have had a P.F. Chang’s Lettuce Wrap, so now you’ll be able to make your own version at home, fresh and delicious.

Here’s my Famous Rainbow Lettuce Wrap ‘recipe card’ I developed for Tiger Beer for a sponsored mini launch in North Florida.
In Asia, ice cold beer is always served with spicy food.

Feel free to swap out with any crunchy veggies or nuts you love, that’s my whole philosophy of what I teach anyway.

The beauty of my wok and stove setup is that you can cook anywhere!  Many Wok Stars will take their handy portable kitchen and make this Rainbow Lettuce Wrap to show off in front of their guests, I’ve heard outside by the patio, poolside, on a yacht, during camping trips, the list is endless! I’ve even taken my Wok Star Kit to give presentations during Wellness Week at a luxury Wellness resort, Grand Velas in Los Cabos, Mexico. My presentations were very well received by adults and kids alike. They even asked the Hotel manager if my Rainbow Lettuce Wrap could be incorporated into their restaurant menu, ha, ha.

Enjoy being hero worshipped, ha, ha!

Tips for an outstanding salad with Chef Juan Licerio Alcala

December 31, 2017 By Eleanor Hoh 1 Comment

Chef Juan Licerio Alcala shares tips for an outstanding salad during Wellness Getaway at Grand Velas Los Cabos, Mexico. He wants to eliminate unhealthy snacking throughout the day and keep you satiated.

I love that we share a lot of the same philosophies about cooking.

Guests got to “personalize” their salad from these ingredients!

Wellness Getaway at Grand Velas Resort, Los Cabos (Updated)

December 11, 2017 By Eleanor Hoh 8 Comments

Traveling and teaching Wellness in exotic and serene surroundings is a dream come true and recently, I got to do it for the first time at Grand Velas Los Cabos, a $150 million all inclusive luxury spa resort in Mexico. Their Wellnessing Getaway with theme, Grateful Journey was so appropriate because I had so much to be grateful for: getting invited by Miami Curated to teach my delicious, no-recipe approach for a healthier lifestyle; my mom for teaching me how to cook; instant friendships made with fellow instructors at this Getaway.

Look at this view! Spa Atelier is on the left with Azul restaurant facing ocean views where I gave my class. On right are 3 infinity pools.

My Wellness Suite had 2 storeys with massage table and exercise room on top floor and bedroom opening out to plunge pool and ocean views!

Wellnessing Getaway at the Spa was a week full of activities guests could enjoy from Ceremonial Smudging, an ancient practice for energy cleansing to Mandala and fitness workshops, as well as yoga and meditation to finding your Dosha culminating with an Ayurvedic dinner which I’ll be posting in another blog.

My cooking classes were set up on the balmy terrace of Azul with ocean views.  Thanks to Chef Juan Licerio Alcala, Executive Chef at Grand Velas and especially to Chef Luis Quiroz, Executive Chef at Azul, responsible for gathering all my ingredients.  I got a chance to interview many of the restaurant chefs and discovered Chefs Juan and Luis had worked in the US (in separate blog soon.)

Chef Christian helped prep my Rainbow Lettuce Appetizer. I discover he’s also a musician and loves Asian food. I gifted him Hoisin Sauce as a ‘thank you’!

The most rewarding part of this experience was hearing from guests who enjoyed my dishes and were surprised by how fast and easy wok cooking was with so few ingredients and seasonings. I was happy to debunk many misconceptions about wok cooking like the kind of wok and stove to use. I was also happy to encourage moms to cook with their kids at a young age. Giving them small tasks with prepping and the stir fry give them a feeling they can cook and they end up eating what they cook. The kids were definitely paying attention and amazed me with how much they absorbed like ‘using what you have in your fridge’ instead of hunting for ingredients from a recipe or ‘keeping everything dry for a stir fry.’

I’m looking forward to focusing on corporate wellness programs especially if they involve staying at stunning resorts like the Grand Velas Los Cabos, bring it ON!
