The Dean of FIU Hospitality & Tourism Management, Professor Michael Cheng gave me a stamp of approval at Wok Star Supper Club collab with Ghee Wynwood. He’s also a fellow Malaysian, so of course we bonded over our favorite Malaysian dishes—and the sad lack of them here in Miami. Stay tuned… we’re brewing up something at FIU!

I got so wrapped up making sure everyone was having a good time (and organizing group shots!) that I completely forgot to take videos.

One of my favorite parts of hosting these is curating the guest list—pairing like-minded folks at the table. A last-minute reservation from a hospitality finance guy ended up sitting with two chefs and an Event Producer and Wok Star! Perfect mix.

Everyone raved about the 3-course, 13-dish Tasting Menu! I shared fan favorites from 1st & 2nd course! Thank goodness my friend captured some beautiful food shots.

Easy, 3 ingredient prawns in 10 minutes your family will adore!

My mom’s delicious Malaysian Assam Prawns in a wok is fast and easy. I’m sharing her SECRETS and SIMPLIFYING the dish for maximum flavor with minimum work.  Just 3 ingredients, 10 minutes and you’re done! Assam Prawns is a Nyona dish (the best of Chinese and Malaysian food, also known as Peranakan).

Do you know assam or tamarind are the same thing? It’s a slightly sour fruit pulp. The sourness is what makes a dish so appetizing. It’s used in many Malaysian and Nyona dishes like Tamarind Pork Rib Curry. It’s another of mom’s dishes that my family loved. I’ll be sharing blog and video soon.

I explain in the video which assam pulp to get so you don’t make a mistake like I did!

The wild caught jumbo prawns were perfectly seared in my cast iron wok and flavored with the 3 ingredient Assam Sauce. You can also make in your cast iron skillet!  10 minutes from start to finish, DONE!

Note: Please no nonstick woks or pans because it cannot handle high heat.

Wok Star’s Famous Rainbow Lettuce Wrap

This Rainbow Lettuce Wrap is an “Asian taco”, I serve this as an appetizer in my cooking classes. It’s always a BIG HIT and will WOW your guests. A “rainbow” of colors and beautiful presentation with flavors and textures that explode in every bite.

Rainbow Lettuce Wrap Appetizer

Pairs beautifully with Zonin prosecco, ice cold Tiger Beer, both light and bubbly and of course Fiji Water.

Use a crispy Romaine Leaf.  Slather sweet Koon Chun’s Hoisin Sauce on leaf, fill with ground turkey and a “rainbow” of multi colored bell peppers, crunchy jicama and/or chayote, topped with toasted pumpkin seeds.

I call it a “Party Dish”, cause it’s a PERFECT appetizer for entertaining at home, savor during Game Day or show off at Tailgate. It’s FAST to pull together. I have eaten this as my main course dinner. Make in small batches so it’s fresh and warm.  It’s addictive! You can even make the dishes ahead and just warm up last minute, of course not the lettuce leaves.

You may have had a P.F. Chang’s Lettuce Wrap, so now you’ll be able to make your own version at home, fresh and delicious.

I’ve even taken my Wok Star Kit to give presentations during Wellness Week at a luxury Wellness resort, Grand Velas in Los Cabos, Mexico. My presentations were very well received by adults and kids alike. They even asked the Hotel manager if my Rainbow Lettuce Wrap could be incorporated into their restaurant menu, ha, ha.
