Mangoes for Mother's Day!

I can hardly believe it’s 2 years since my mom passed away, so for Mother’s Day,  I’m celebrating her life with mangoes, one of her favorite fruit and mine!  Eaten on its own or in a salad or salsa, the creamy, smooth champagne mangoes are divine.  Mangoes always conjure up sweet memories of my childhood growing up in Hong Kong. My favorite mangoes were the tiny ones you can pop into your mouth in one bite!  Another memory was of my mom showing us how to cut the mango along the seed and cubing it inside its skin, then pushing the skin from below so the juicy cubes magically popped up ready for us to enjoy without getting our hands all sticky. I love showing this trick to my friends who’ve never seen it done before!

What I’d like to remember my mom for are 2 essentials she taught me which have helped me tremendously in my daily life, thanks mom!

Mom&Me1)  Her “little bit of this and little bit of that” approach gave me permission to stray outside ‘recipes’ and I loved her for it. I didn’t understand how significant this approach was till I started teaching cooking myself.  It opens up a whole new world of exciting surprises when you don’t have to follow a rigid recipe.

2)  The way you do anything in the kitchen applies to everything you do in life i.e. put your whole focus into what you’re doing and do it well! It’s this ‘focus’ that’s motivated me in everything I do from small to large projects.
My three sisters and I are very different but we all inherited a bit of her and we’re proud of it.  She’s definitely left her stamp on all who were lucky to have met her!

Mango, Kale Salad

I dreamed up mango and kale salad by finding both at discounted prices from my local farmers’ market.  How I come up with my dishes is by seeing what’s fresh and seasonal! Though I confess I overdid it with buying a whole case of 14 mangoes!  It was a race to eat them pretty quickly because they started ripening. So, that’s how I ended up making a mango salsa with other vegetables left over from my cooking class.

The sweetness of mango in contrast with the slightly tangy flavor of kale complemented each other very well.  Because raw kale can be pretty hard to digest, ‘marinading’ with my homemade vinaigrette did wonders, they became soft and tender as if they were cooked and only for as little as half an hour before I tossed them with the rest of the fixings. So easy and what a delightful change, they brought a more crunchy texture compared with the usual field greens.  Mango, kale salad with grilled curry pork shoulder were such a treat, I’ll definitely make this again.

Mango Salsa
Cubed jicama, tomatoes, shallots, cucumber and mango with a touch of Japanese rice vinegar, tad of salt was all I added to make this salsa.  Such a versatile side, I enjoyed it in so many ways…for breakfast with fried egg, lunch with frittata or grilled sausage, with a leftover Filipino grilled pork,  for a snack with brie on crackers…

3 Ingredient Broccolini

Blanching in a wok is the fastest, easiest method to cook vegetables that have hard stems and when you have a lot of them!  A wok is a perfect vessel, it has a wide opening and deep reservoir to hold the water and quantity of vegetables. Alternatively, use a wide deep pot if you don’t have a wok.

I learned this wonderful technique from my mom when she had to cook for seven of us in the family.  Even though there’s just my husband and I, I use leftovers for lunch or for the following night’s dinner! So, when my virtual Let’s Lunch theme challenge called for a three ingredient post, blanching came to mind immediately!

Vegetables that work really well are broccolini, broccolette, broccoli incl. Chinese variety, brussel sprouts, bok choy, mustard greens, asparagus, swiss chard. Actually, leafy greens like curly kale, spinach do well too, you just have to remember blanching cooks triple fast and leafy greens shrink a lot, so you need to do them in batches to get the quantity you need.
Ingredients:

2 large handfuls of broccolini
few squirts of olive oil
salad dressing of your choice (I used store bought French vinaigrette but usually my own homemade vinaigrette)

How to do it…
1)   Boil water in wok till rolling boiling, put a wok lid on.
2)  Add few squirts of olive oil. Best trick to keep vegetables from turning grey.
3)  Use fork to test stem for doneness how you like them, I like mine pretty crunchy
4)  Empty wok of broccolini into colander,  either run under cold water or put in an ice bath to stop from cooking
5)  Squirt dressing all over, serve with whatever dinner.

Green Beans 2 Ways

Eating vegetables is a hot topic, remember when Jessica Seinfeld hid them so her kids didn’t know they were eating them and caused such controversy?  I think that’s the most ridiculous thing.  Kids will grow up never knowing what vegetables look or taste like! I’ve never understood what all the fuss is because growing up, my siblings and I ate vegetables at every meal and loved them. My mom was a fantastic cook, so that may have something to do with it?  She always presented food with loads of flavor and variety, we looked forward to our dinners.
So is it because modern parents dote on their kids too much and give in to their whims? Is it a cultural thing? Would love to hear your take on this topic!

Practicing what I preach – use what I have in the fridge, so green beans but prepared 2 ways, one cold and one hot!  Beans are not in season in Florida, I found out through this handy site where they list vegetables and fruits that are in season in your state.
This month, we are celebrating #Letslunch member, Joe Yonan’s new cookbook: Eat Your Vegetables, Bold Recipes for the Single Cook, congratulations Joe!  Such an important book to inspire folks who don’t have a clue how to prepare them.

What’s my favorite vegetable? Very tough choice, there are too many but one of my favorites is Morning Glory (kung kong is what my family usually call this) with hollow stems and cooked tender with pounded chilies in shrimp paste sauce, hmm. When my mom made that, she had to make 2 heaped plates!  If you ever get a chance to have this vegetable, get it and have some for me!
Just a reminder if you’ve not visited my blog before, I don’t use measurements or recipes when I cook, just a pinch of this and that and viola.  So here’s Green Beans, 2 ways, enjoy!

Ingredients:
1 lb. approx. green beans blanched with drop of Avocado oil
Green Bean Salad
Handful fresh pineapple cubes
1 plum or Romana tomato cubed
1 scallion chopped
Pinch of cilantro chopped
Annie’s chili lime salad dressing
Make this dish first to prevent discoloration.
1) Blanched all beans in boiling water in my cast iron wok with few drops of Avocado oil to prevent discoloration, great tip I learned from my mom.  Drain after tasting to see if cooked but still very crunchy. Run cold water to prevent cooking.
2) Drain well and plate beans, add all chopped ingredients and toss well in dressing, done!

Green Beans in Spicy Thai Satay Shrimp Paste
Avocado oil
2 cloves Garlic thwacked
knob ginger shredded
red bell pepper, small cubes
I scallion chopped
Pinch cilantro chopped
1 heaped teaspoon of Spicy Thai Satay Shrimp Paste
Method:
1) Wipe out wok, heat it up, then add 2 swirls of Avocado oil and fry up red bell pepper, scallions in garlic and ginger till you can smell yumminess but not burning.
2) Add beans and Satay Shrimp Paste, combine well, it’s done!
