A great opportunity to make a wok omelet using stir fried mushrooms & red bell peppers from last night’s dinner. (I must be losing it, didn’t take photo of omelet in wok! Next time, it’s a perfect shape to swirl around.)
Added some roast chicken for protein hit, whole wheat toast and fresh fruits makes this a delicious start to a rainy day in Miami Beach!
